What Are Burnt Cashews? The Dark-Roasted, Smoky Cashew Explained

The short answer
A burnt cashew is a cashew that has been peeled and then roasted past the usual golden stage, until its surface darkens and chars in places. That gives the nut a bold, smoky taste with a little bitterness at the edge. The name sounds alarming, but 'burnt' here is a style, not a mistake. Good ones are crunchy and deeply roasted, never acrid.
How a burnt cashew is made
Every cashew starts the same way. After the nut is taken out of its shell it has a thin, papery brown skin, which is peeled off to leave the pale ivory kernel. You can read the whole journey in our guide to how a cashew is grown and processed.
A burnt cashew is made from that peeled kernel. Instead of stopping at a light golden roast, it's roasted for longer and darker, until the surface browns deeply and takes on dark, uneven marks. The exact roast depends on the maker, but the idea is always the same: let the heat go further than usual, then stop before the nut turns bitter all the way through.
How burnt cashews taste
Expect a stronger, more rounded flavour than a plain roasted cashew. The nut is still rich and buttery inside, but the dark surface adds a toasty, smoky edge with a slight bitterness, a bit like the dark crust of well-toasted bread. It tastes more caramelised than a lightly roasted nut.
The texture is crunchy, with a deeper crispness than a golden cashew. If you prefer something mild and creamy, a plain oven roasted cashew will suit you better. If you like bold, dark flavours, this is the one to try.

Is it 'burnt' or just overcooked?
There's a real difference between a cashew that's roasted dark on purpose and one that's simply overcooked. A properly made burnt cashew has dark, uneven marks on the surface, but the nut inside is still cooked through and tastes toasty, with the smokiness balanced by its natural richness. An overcooked cashew tastes sharp and bitter all the way through, and the inside is dark too. If a burnt cashew tastes harsh, it's been roasted too long, and that's a fault.
Why we roast in small batches
Getting a dark roast right takes judgement. Time and temperature have to be watched by eye, nose and ear, because there's only a short moment between deeply roasted and truly bitter. That's one of the reasons we roast in small batches. We explain the basics in how Sri Lankan cashews are roasted.
Our Burnt Cashew Nut is the result: a bold, smoky, crunchy cashew for people who like their flavours deep.
How burnt differs from the other flavours
Flavoured cashews get their taste from a seasoning on the outside, such as chilli or garlic. A burnt cashew works the other way: the flavour comes from the roasting itself, with nothing added. That makes it one of the simplest flavours in the range, and a good match for anyone who doesn't like spice but wants something with more character than a plain cashew. Our guide to how cashew flavours are made compares them.
Ways to enjoy them
Eat them on their own, with a cup of tea or coffee, where the smoky edge works especially well. They also stand up to strong flavours, so they pair nicely with cheese, dark chocolate or dried fruit. You can chop a handful and scatter it over a salad or a rice dish for a deeper crunch than plain cashews give. For more ideas, see 5 ways to use roasted cashews.
They're also a good gift for someone who likes bold flavours. A mixed gift box lets you include the burnt flavour alongside milder ones.
Is it healthier?
A burnt cashew is nutritionally close to any other roasted cashew, and we wouldn't claim a health benefit from the dark roast. Our guide to cashew nutrition facts covers the numbers.
Storing them
Like other roasted cashews, keep them sealed in an airtight container, away from heat, light and damp, so they stay crunchy. Our guide to storing roasted cashews has the details.
