How Sri Lankan Cashews Are Roasted

The nut that hides inside a fruit

A cashew doesn't grow the way most nuts do. It forms as a single kidney-shaped shell hanging off the bottom of the cashew apple, a soft, colorful fruit that farmers harvest by hand. Only after the apple is removed does the actual work on the nut begin.

Why cashews can't just be cracked open

Between the outer shell and the nut inside sits a layer of oil that's caustic to skin — the same family of compound found in poison ivy. This is the real reason raw cashews-in-shell never make it to grocery shelves the way peanuts or almonds do: the shell has to be carefully processed before the nut inside is safe to touch, let alone eat.

Traditionally, this meant roasting or steaming the shells first to break down that oil, then hand-shelling each nut once it had cooled. It's slow, and it's why cashews have always carried a higher price than most other nuts — the labor is baked into every handful.

From raw to roasted

Once shelled, the raw kernel still has a thin papery skin and a mild, almost starchy flavor — nothing like the rich, buttery taste people associate with cashews. That comes from roasting: tumbling the nuts at a controlled temperature until the natural sugars caramelize and the inside turns golden.

Roast too briefly and the flavor stays flat. Roast too long and the sugars burn, turning bitter instead of sweet. Getting an even, golden roast across an entire batch — not just the nuts on the outside of the pile — is the difference between a forgettable bag of cashews and one worth going out of your way for.

Why small batches matter

Large-scale processors roast in bulk to keep costs down, which makes consistency harder to control at the edges of each load. Roasting in small batches means every handful gets closer, more even attention — and it means we can taste-test as we go instead of trusting a single setting to work for a ton of nuts at once.
