Roasting is the biggest flavour switch

Cashews begin as a pale ivory kernel with a mild, creamy taste. Heat changes them. The longer and hotter a cashew is roasted, the darker it turns, the more its flavour moves from creamy to nutty to smoky, and the crunchier it becomes. Understanding the roasting levels helps you choose the cashew you actually want, and explains why the same nut can taste so different from one pack to the next.

Unroasted: pale and mild

A cashew sold as raw is pale ivory, soft and mild, with a buttery, slightly sweet flavour. It is not truly raw, as we explain in what happens to the cashew shell, because heat or steam is used to free the kernel. Its soft texture is why plain cashews blend so smoothly into milk, cream and butter. Our Cooking Cashew is plain, and is made for the kitchen.

Light roast: golden and crisp

A light roast takes the cashew to a pale golden colour. It becomes crisp, with a gentle toasted flavour that does not hide the cashew's natural sweetness. This is the level many people think of as a good roasted cashew. It suits people who like the taste of the nut itself.

Golden roast: buttery and crunchy

A golden roast goes a little further, to an even, deep golden colour. The crunch is firmer, and the flavour is richer, nuttier and buttery. Our Oven Roasted Cashew is oven-roasted to this level, with no added oil. See raw vs roasted cashews for how the two compare.

Dark roast and burnt: smoky and bold

A dark roast takes the cashew past golden, until the surface turns deep brown and begins to char in places. The flavour is bold and smoky, with a little bitterness at the edge, and a very firm crunch. Our Burnt Cashew Nut is roasted to this level on purpose, with no seasoning added. It is a style and not a mistake, as we explain in what are burnt cashews?. The line between dark and bitter is thin, so the roasting needs close attention.

Roasted and seasoned

Seasoned cashews are roasted and then coated with salt, spices or other flavours. Our Classic Roasted Salt & Pepper, Garlic and Deviled cashews are roasted first, and finished with their seasonings, as we explain in how flavour gets into a cashew. The roast underneath still matters, because it gives the seasoning something crisp to cling to.

Why a roast is never exactly the same

Roasting depends on the size of the nuts, how dry they are, the temperature, and the time. Small cashews roast faster than large ones, and a batch with mixed sizes roasts unevenly. That is one reason we roast in small batches, to order, and watch each batch, as we describe in how Sri Lankan cashews are roasted. A good roast is even, with no pale patches and no dark, burnt spots, except in a deliberately dark roast, where the darkness is the point.

How to roast cashews at home

Heat the oven to about 170 to 175 degrees Celsius. Spread plain cashews in a single layer on a tray, and roast for 8 to 15 minutes, stirring halfway, until they are golden. Watch them closely at the end, because they go from golden to too dark quickly. Let them cool completely on the tray, when they crisp up. Times depend on your oven and on the size of the nuts, so check often. Our guide to spiced roasted cashews at home shows how to add a seasoning.

Choosing your roast

Choose plain for cooking, golden for an everyday snack, seasoned for a flavour hit, and dark or burnt for something smoky with coffee or tea, as in the best cashew pairings. If you are not sure, the Cashew Taster Gift Box lets you try several roasts and flavours in one box. Whichever you choose, keep your cashews in an airtight container, as in how to store roasted cashews, so the roast you chose stays crisp.

Common questions

Is a darker roast better for you? Not in any clear way. Roasting changes the flavour and texture much more than it changes the nutrition, as we explain in cashew nutrition facts. A darker roast is a matter of taste.

Why do some cashews taste bitter? Usually because they have been roasted too hard or for too long, or because they have gone stale. Fresh, evenly roasted cashews taste clean and buttery. If a cashew tastes sour, waxy or like old paint, it has probably gone off, and it is best to throw it away.

Can I roast cashews again if they have gone soft? You can re-crisp slightly soft cashews in a low oven for a few minutes, and let them cool completely. This will not rescue cashews that smell or taste rancid.

Which roast should I choose for gifts? Golden and lightly salted cashews are the safest choice, because most people like them. Dark or spicy cashews suit people you know enjoy bold flavours.
